Do you love Peanut Butter? Do you love cookies? If you answered no to either of these questions…. what is wrong with you?!?! If you answered yes, then I have the perfect sweet but healthy dessert treat for you that takes less than 15 minutes to make – bonus is that it is also paleo compliant and gluten/ refined sugar free!
The ingredients below are for one serving, so obviously increase depending on the number you wish to bake (is 10 acceptable I wonder…..?!)
1 tablespoon nut butter of your choice (you can use almond, cashew, hazelnut etc if you wish)
1 tablespoon maple syrup
1 tablespoon coconut oil
2 tablespoons ground almonds
1 tablespoon coconut flour
1/2 teaspoon baking powder
Pinch of salt
Small handful dark chocolate chips (or to taste)
Pre-heat your oven to 180 degrees. Melt the nut butter, maple syrup and coconut oil either in the microwave or gently in a saucepan. Melt until the mixture has a liquid consistency but do not let it start to boil. Add in the ground almonds, coconut flour, baking powder and salt and stir until well combined. If the mixture looks too dry add a little almond or coconut milk to ensure it has the consistency of cookie dough. Depending on how sweet your tooth is you may also want to add in a little more maple syrup at this point. Stir in half the chocolate chips and pop the mixture into individual ramekins, then top with remaining chocolate chips and bake in the oven for 8 – 10 minutes. This will give you a gooey/melty soft cookie texture, if you prefer more of a crumbly cookie texture bake for 10-12 minutes but check throughout baking process that the top does not burn.
Remove from the oven, allow to cool slightly (if you can contain yourself!) and then enjoy!
This recipe can be adapted to your personal taste – you can mix up the nut butter used, or replace the chocolate chips for nuts/ raisins. If you think of another way to customise the cookie dough please do let me know!
