Some things in life were meant to be together – strawberries and cream, Kim and Kanye, long baths and candlelight and of course coffee and walnut. To me its a classic flavour pairing that never fails, so when Multipower sent me a tub of their Coffee Caramel 100% Whey Protein and asked me to create a recipe with it, there was only one choice as far as I was concerned. So here it is – my recipe for the Multipower Coffee Walnut Protein Cake.
250g coconut flour
3 scoops (approx 90g) Multipower Coffee Caramel Whey Protein
100g coconut sugar
Pinch of Himalayan Pink Salt
1 tsp Baking Powder
2 large eggs, beaten
150ml brewed coffee (I used ground coffee and a cafetiere but instant granules and water will do)
Large handful of walnut pieces
1 tbsp Maple Syrup
Preheat oven to 180 degrees and grease a cake mould with butter or coconut oil. Mix all dry ingredients in a bowl (excl walnuts), then make a well in the centre and add the beaten eggs and 100ml of the coffee (which has ideally cooled down). Stir well until combined, and if mixture still appears dry add a splash of water or milk until a batter-like consistency has been achieved and could be poured. Once you have this, stir in the walnut pieces and then transfer to the cake tin.
Smooth the surface of the mixture and then place in the centre of the oven for 15-20 minutes. Check the cake is cooked by inserting a knife into the middle – if it comes out clean it is ready.
Meanwhile, make the icing in a separate bowl. Combine the quark, the remaining coffee and the maple syrup and stir until a smooth caramel colour has been achieved. Store the icing in the fridge until the cake has completely cooled from the oven.
When the cake is cold to the touch, remove the icing from the fridge and spread evenly over the top of the cake. You could even add extra walnut pieces on top to decorate, or a sprinkle of cacao powder. Keep the cake in the fridge, where it will store for up to 3 days, and enjoy a slice of this as an afternoon treat or even as a post workout snack to refuel after a hard training session, as this cake and the icing are literally packed full of protein!
