Lighter Strawberry cheesecake
Pursuing a healthy lifestyle doesn’t have to mean boring, bland mealtimes missing out on all your favourite treats. Here’s a way to enjoy cheesecake without the huge fat and sugar content of shop-bought or restaurant versions. Each cheesecake contains just over 200 calories and a whopping 12g of protein!
Ingredients (for 4 individual cheesecakes)
8 x ginger oat biscuits (I used Nairns)
1 x 200g tub fat free Greek yogurt (I used Fage)
1 x 200g tub low fat cream cheese
4 tablespoons raw honey
1 tablespoon vanilla extract
2 tablespoons organic strawberry jam
100g strawberries, cleaned and chopped
Put biscuits into a small plastic bag and “smash” with a rolling pin until you have chunky crumbs. Press the crumb mixture into the bottom of each cheesecake dish (I used small glass and china ramekins).
In a separate bowl, mix the Greek yogurt, cream cheese, honey and vanilla until smooth and creamy. Add the cheesecake mix to each of the four pots, smooth over and then chill in the fridge for at least an hour before serving (longer if possible).
Just before you are ready to serve, mix the strawberry jam and chopped strawberries well and then add as topping to each cheesecake. Feel free to garnish with fresh mint and enjoy! Low in sugar and fat and high in protein and taste!
